What is Sono-Steam? Sono-Steam® is a thermal ultra-sound treatment combining the effect of hot steam and high-frequency ultrasound.

Where to use Sono-Steam?
Sono-Steam® is unique for the processing of very sensitive products that do not tolerate high temperatures neither as partial nor total heat penetration. Therefore, the method is ideal for minimal processing of food such as fresh meat, eggs, fruit and vegetables where heat-induced changes of the product are not acceptable. Sono-Steam® is also well suited for in situ cleaning of process equipment.
Sono-Steam® works so fast that the method can be integrated in the production process without creating bottlenecks, thus keeping the level of microorganisms as low as possible and avoiding product contamination.
How does Sono-Steam work?
The hot steam kills the microorganisms and the ultrasound enhances steam efficiency. The ultrasound ensures that the steam has unrestricted access to the surface and removes the protective and heat-insulating air on the surface. In this way the heat gets into contact with the germs on the surface easier and faster and efficiently reaches the germs hidden in natural microstructures, pockets and pores.
Due to the small size of the germs, they are quickly heated through and destroyed. The process can therefore be stopped before the heat penetrates below the surface of the product.
Sono-Steam rather than steam
In order to obtain the same level of efficiency, a traditional hot air or steam treatment has to continue for so long that significant amounts of heat are transmitted to the product. This excludes treatment of numerous types of food.
Sono-Steam® treatment works very fast and without significant heating which results in a minimum effect on the product being processed. As Sono-Steam® is far more efficient and the process consequently faster, consumption of energy and water is also lower.
